  • 1 bell pepper chopped
  • 1 can diced tomatoes drained
  • 1 cup corn kernels
  • 1 cup black beans drained and rinsed
  • 1 packet taco seasoning
  • 2 cups shredded cheese cheddar and Monterey Jack blend
  • 1 bag frozen tater tots
  • Optional toppings: cilantro sour cream, jalapeños

  • Place in the preheated oven and bake for 30-35 minutes, or until the tots are golden and crispy.
