Ingredients
  

  • 1.5 lbs 700g boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup 240ml chicken broth
  • 1 cup 240ml heavy cream
  • 1 cup 115g grated Parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp red pepper flakes optional
  • 1 lb 450g pasta (such as penne or fettuccine)
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Step 1: Season the Chicken
  • In a small bowl, mix together the salt, black pepper, paprika, and garlic powder. Season the chicken breasts evenly with the spice mixture.
  • Step 2: Cook the Chicken
  • Heat the olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set it aside to rest.
  • Step 3: Sauté the Onion and Garlic
  • In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another 1-2 minutes, until fragrant.
  • Step 4: Make the Sauce
  • Pour in the chicken broth and heavy cream. Stir well to combine. Add the grated Parmesan cheese, dried basil, dried oregano, and red pepper flakes (if using). Stir until the cheese is melted and the sauce is smooth. Reduce the heat to low and let the sauce simmer for about 10 minutes, or until it has thickened slightly.
  • Step 5: Cook the Pasta
  • While the sauce is simmering, cook the pasta according to the package instructions until al dente. Drain the pasta, reserving a little pasta water if needed.
  • Step 6: Slice the Chicken
  • Slice the rested chicken breasts into thin strips.
  • Step 7: Combine Everything
  • Add the cooked pasta and sliced chicken to the skillet with the sauce. Toss everything together until well coated. If the sauce is too thick, add a little pasta water to thin it out.
  • Step 8: Serve
